Ingredients
- 5 large eggs (whole)
- 2 large eggs (beaten)
- 800g quality sausage meat
- 1 small bunch fresh chives, finely chopped
- 1 whole nutmeg
- 1 tbs chutney
- Sea salt to taste
- Freshly ground pepper to taste
- 150g plain flour, for dusting
- 150g good quality white bread crumbs
- 2 litres cooking oil of your choice
Method
- 1. Preheat oven to 175ºC (350ºF). Heat oil in deep fryer to 190ºC (375ºF)
- 2. Place eggs in sauce pan and cover with water. Bring to boil. Cover, remove from heat & let eggs sit in hot water for 10-12 minutes, remove from hot water, allow to cool, then peel
- 3. Combine meat, chives, nutmeg, chutney, salt & pepper
- 4. Flatten the meat, make a patty & cover each egg completely
- 5. Very lightly flour the meat-covered egg
- 6. Dip the meat-covered egg in the beaten eggs, then roll in bread crumbs to cover evenly
- 7. Deep fry until golden brown
Serving suggestions
- Cut the Scotch eggs in half
- Serve over a bed of lettuce and sliced tomatoes for garnish with a selection of different flavoured chutneys.
