Karoo-inspired Scotch Eggs recipe

Ingredients

  • 5 large eggs (whole)
  • 2 large eggs (beaten)
  • 800g quality sausage meat
  • 1 small bunch fresh chives, finely chopped
  • 1 whole nutmeg
  • 1 tbs chutney
  • Sea salt to taste
  • Freshly ground pepper to taste
  • 150g plain flour, for dusting
  • 150g good quality white bread crumbs
  • 2 litres cooking oil of your choice

Method

  • 1. Preheat oven to 175ºC (350ºF). Heat oil in deep fryer to 190ºC (375ºF)
  • 2. Place eggs in sauce pan and cover with water. Bring to boil. Cover, remove from heat & let eggs sit in hot water for 10-12 minutes, remove from hot water, allow to cool, then peel
  • 3. Combine meat, chives, nutmeg, chutney, salt & pepper
  • 4. Flatten the meat, make a patty & cover each egg completely
  • 5. Very lightly flour the meat-covered egg
  • 6. Dip the meat-covered egg in the beaten eggs, then roll in bread crumbs to cover evenly
  • 7. Deep fry until golden brown

Serving suggestions

  • Cut the Scotch eggs in half
  • Serve over a bed of lettuce and sliced tomatoes for garnish with a selection of different flavoured chutneys.
  • An ideal snack for a picnic
