Samara’s food philosophy is grounded in the distinctive flavours and culinary heritage of the Karoo, with ingredients sourced from local producers.
Our cuisine embraces South African classics with a Karoo twist, designed to create comforting aromas harking back to a simple farm lifestyle with locally-sourced ingredients.
The Karoo is well-known for its excellent lamb and we support local farmers through the butcheries we purchase from. We also have a herb garden and vegetable garden on the reserve, as well as our own regeneratively-farmed lamb and beef.
We believe in sophisticated simplicity – dishes that are refined yet unpretentious, allowing the quality of each element to shine.

Each lodge has its own indoor and outdoor dining areas where meals are served: from a dining room with fireplace to a traditional outdoor boma with firepit. Meal service is relaxed, with various seating options available, from dedicated tables to communal eating and private dining.
